1 cup oil

1 cup sugar

2 eggs

2 1/2t salt

1t baking powder

2t cream of tartar

2 1/2 cups flour

plate with a layer of cinnamon sugar

1.  Beat eggs and add sugar slowly till it makes a creamy substance.

2.  Sift dry ingredients

3.  Mix everything together.

4.  Make small balls and roll them through the cinnamon sugar

5.  Bake for 18 min at 200 degrees Celsius.

Notes:

Makes +/- 2 dozen.

These cookies rise a lot – make small balls and be sure to leave a LOT of space between the balls on the tray otherwise they will rise into each other.

Use cinnamon sugar to taste – some will prefer making their cookies sweeter whilst other will like a simpler less sweet cinnamon variety.

When done right these cookies will crack slightly on top and tastes like pudding when dunked.

Cheap and easy to make.

Cream of tartar is available at most retail outlets and is a fine white baking powder much like bicarbonate of soda and baking powder.
